So the ball is hit to centerfield. Is a dice roll then needed to determine what the CF does with the ball hit to him..(error, catch....etc)?

As has been said before, if you are going to play a lot, buy the charts from SOM. They are super cheap.
On the chart, it will show the various types of catches that a 1 OF will make, and whether or not base runners advance on those, depending on the die roll between 1-20. A 1 allows zero hits on these rolls ever, in the board game at least. A "4" allows hits on 55% of x-chances, several of which roll to the wall for extra bases.
SINGLE(cf) means the runners can test the CF's arm for an extra base. There will be no error on this play.
