I''ll offer my two cents as I live about 20 miles from Saratoga.
Among your starters I love Coveleski. However, Seaver and Marichal are not that well suited for your park given the frequency of ballpark homeruns they give up. I would most definitely find replacements for those two. There are so many usable pitchers that this can even be done successfully post waivers. I also don't think that Stewart is a great value either but at least he is suited for your park. I would keep Worrell and McEaneny ( I can never get his name right) because they are such good values in general. Also Will's hr's are against lefties and I don't think he'll see all that many N lefties. Hooper is not ATG worthy. I can't really envision any circumstance where I would volitionally include him on a team of mine.
I don't like playing Simmons in centerfield. Shoeless Joe is great but I'd rather see Simmons in left and a real centerfielder in center (i.e. a 1 with an arm). So I would have no compunction about losing Jackson. It might be worth your while to shop him around first before just dropping him outright as you might land someone useful in exchange for his services.
Bishop isn't that bad, although I prefer to have him lead off in HR 20 parks. But with Simmons, Ripper and Campanella I wouldn't worry as much about him clogging the bases. I might even bat Ripper 2nd on your team, Cuyler 3rd, then Campanella and Simmons. Bishop should score you 80-100 runs which isn't bad given his pricetag. And his defense is nothing to scoff at. I use him all the time when I don't get my first choice at 2nd base.
