hitting cards. why does #5 look better than #'s 6 and 7?

Because 6 and 7 (and also 8) hitting pitchers have HR's on their own cards.

The best hitting pitchers, by far, are 5N's, since they will hit often over .300 and launch an occasional HR. The 8N's typically hit about .260 or so if I remember correctly.
