..........got them both and I know the fielding charts say that Giles (3/+1/e4) is better than Sheff (4/-2/e4), but does the -2 arm in RF outweight the hit differential between a 3 and a 4? Looking for informed opinions.

If you cant keep them both it really depends on what you need for your lineup. If you need more obp, keep Giles, more power keep shef.

Personally, I would be more comfortable with Giles' modest range advantage. Who are your other outfielders? If you have solid arms in center and left, just to keep the other teams honest, I would say to keep Giles, hands down. If you have weaker arms in those other two slots, I would keep Sheffield. I think his bat, over the course of a full season, would make up for the two run doubles that plop in there over his head.

I'm keeping them both - just trying to figure out who DH's and who plays RF. Been playing Sheff in RF - but I'm leaning towards trying Giles in RF. CF is Jones, LF is Dunn.

Not many people are going to try to run on you with Andruw Jones out there, not with that -4 arm in center, so I would stick with Giles's range advantage. Now... if you're starting J.Jones out there, that's an entirely different ballgame!
