Best Way to Set Up Live Draft for Public League

Hello! Wanting to perhaps create a '21 league with around $100M cap but with a live draft. Any ideas on how this is done? If the date and time of the draft are set after the league is set, then what happens to teams that can't make the date and time? Even if the date and time are posted up front for the league, I've noticed often the league is not filled by that date. It seems better to create a date once the league is a go. Also, I've heard of email drafts where participants are emailed when it is their turn and each player has a certain time (assuming in hours) to get a pick in. Just wanted to get some thoughts on how this is done. I have been in one league with the auto list draft and just was not a huge fan of that format after trying it once.
