Does anyone know exactly what it means in terms of numbers, the difference between conservative, normal and aggresive running and stealing?

it's a chance to steal based off %.

i.e. aggressive (again I don't know the real numbers) 75% of success then try, conservative, 90% of success then try.

Again, I don't think SOM has ever (or will ever) post the actual numbers, but the basis of how it works is that. It could be a 2% drop from one setting to the next, it could be a 10% drop, who knows!
