You might say the Defensive Replacement on the Team Strategy page is more passive, while the Remove for Defensive Replacement on the Hitter Prefs is Aggressive. The former will only replace the player in question if there is a good defensive replacement available; the former will replace him no matter whether there is a de cent replacement or not.
I do what you've suggested above often with platoons; run a platoon with one better defender, then use him for defensive replacement for the other half of the platoon. The only player who would be replaced is the one you indicated you wanted replaced.
