I just started playing a 70's league with Ken Griffey, and he was hit-by-pitch twice in the first game. Upon looking at his cards, I noticed that only his 1974 card had any HBP entries, so it must be that card. Possible cards are 1974-1978.

Out of curiosity, I looked up his stats ( http://www.baseball-reference.com/players/g/griffke01-bat.shtml ), and was surprised to learn that he had one HBP in '74, '75, and '76, and none in '77 & '78, but the '75 - '78 cards do have any HBP outcomes, at all.

I found this interesting...any ideas?

No but if you want to win at the Mystery game set aside what happened in real life and concentrate on the cards. If you say only one Griffey card has a HBP (I find that a little unusual, are you sure about that?) than bingo you have your card. Most guys have a HBP on almost all of their cards...... Griffey had less than half the plate appearances than in '75 and '76. So the higher ratio of HBP to PA is the reason.
