Total rating does not come into play. You want as many high rated players as possible as it's totally random which pass rusher is checked on any given play. You can have two ends that are 12+ rated but the roll indicates it's your run stuffing defensive tackle who is only a 3.
As to which is preferable in your above example, it depends on your opponent. if his offensive line is a sieve, it's probably better to have the four 7's across the board, but if he's weak in the middle and has strong Offensive tackles, you may want the two ends at 10+. But again, the dice determine who's rating is used, and they are very very fickle.
