I'm positive both catchers can't get hurt. In [u:2e4463ab5f]every[/u:2e4463ab5f] instance someone said here they had 2 catchers get injured, they had a 3rd catcher-eligible player on their team after checking. Never has there been proof otherwise.
In addition, both catchers can not get injured at the same time regardless if one is DH-ing. And as LMB said above, if your starting C gets injured, and your (2nd) C is indeed at DH, someone else would fill in for the remainder of that game, and the B/U C which is DH-ing would remain at DH for that game, and then starting the following game.
One sidenote: Make sure you have your B/U Catcher listed in the expanded substitution place. If I'm not mistaken someone (last year) had a non-C start the remainder of the series because their 2nd catcher was at DH and they didn't have that catcher listed as the sub for the 1st catcher. Hope that's not confusing.
Lastly, on the subject of where both catchers should be "allowed" to get hurt, it would be very difficult on us to allow that. We have no "farm system" like the Majors. We would have to take a cap hit every time both catchers got hurt.
